Tomato & Sage Sauce
Making this sauce in advance will allow the flavours to develop over time. You can add the sage whole, or finely chopped. The sauce can either be served as is, or blitzed in a food processor for a smoother texture. It’s good with gnocchi, or used as the tomato base on pizzas.
Ingredients
- 400gm tin of tomatoes, or 4 tomatoes (chopped)
- 1 onion
- 1 clove of garlic
- 1 Tbsp of apple cider vinegar
- 1 tsp of Dijon mustard
- 1 Tbps of Worcestershire sauce
- 2 Tbps light soy sauce
- Tabasco sauce
- Bunch of fresh sage
Method
Put large splash of olive oil into a saucepan over medium heat.
Slice the onion and garlic and fry in the oil for 10-15 minutes, browning nicely.
Add the tomatoes and cook for 5 minutes.
Add the apple cider vinegar and cook for 1 minute.
Add the Dijon mustard, Worcestershire, light soy sauce and a splash of Tabasco.
Cook for 5 minutes, stirring occasionally.
Add the sage, season with salt and pepper and take off the heat.
