Gnocchi

A simple and easy gnocchi recipe.

Ingredients

  • 450gm of potatoes
  • 1 cup of flour
  • 1 tsp of salt
  • 1 egg

Method

Bring a pot of water to a simmer and add the potatoes. Gently boil for 35-45 minutes, until very soft.

Take the potatoes out of the water and let them cool down. Peel them and in a bowl gently mash them to a smooth consistency.

Put the flour, salt, egg and mashed potato in a bowl and mix together. Knead gently for a minute until the dough comes together.

Put the bowl aside for around 20 minutes to let the dough rest.

Once that’s done, take the dough out and roll it into sausage-like sections, about 1cm wide. Using a sharp knife, cut 1.5cm lengths so that you have a series of small pillow looking gnocchis.

Put a large pot of salted water on high heat and add the gnocchi. Let them cook in the boiling water until they all float to the surface. Let them boil for another 2 minutes after this happens.

Using a slotted spoon, remove the gnocchi and put them in a single layer on an oiled plate or baking paper. Let them cool.

From here you can either serve them with sauce, or fry until gold ‘n crispy.
