Gaelic Steaks

This is a recipe from Windsor Castle. If it was being cooked for the queen the garlic would be omitted.

Ingredients

  • 2 Beef steaks (~250gm each)
  • 250gm Mushrooms
  • 2 Onions
  • 2 Cloves of garlic
  • 50gm Butter
  • 150m Cream
  • Whiskey

Method

Slice the mushrooms and onions.

Season the steaks with salt and pepper, and sear them on a pan or griddle that is heated to very hot.

Remove the steaks and rest them. Add the butter to the pan to deglaze it. Add the sliced onion, mushrooms, garlic and a dash of oil.

Add a big plash of whiskey to the pan and flambe the mix.

Add the cream and simmer to reduce a little.

Add the steaks back to the pan, make sure to include the juices.

Cover the steaks with the sauce.

Finely chop some parsley to garnish.
