Pumpkin Damper
Ingredients
- 1 1/2 cups of self-raising flour
- 1 of teaspoon baking powder
- 1 of teaspoon salt
- 1 of tablespoon of sugar
- 30 grams of butter, softened
- 1/2 cup pumpkin, boiled or baked and mashed
- 1/4 cup of milk
Method
Heat your oven to 200C.
Chop and roast the pumpkin.
Combine flour and salt in a bowl, rub in butter.
Remove the pumpkin from the oven and mash.
Add pumpkin to the flour mixture.
Knead briefly with a dash of milk.
Place the dough on a baking tray and flatten, slash the top.
Bake for 35 minutes.
