Chocolate Whiskey Mousse
This is a recipe from Queen Elizabeth’s Balmoral kitchen which I found on chef Darren McGrady’s YouTube channel. If you want some insider information on cooking for the royals, check out his channel!
- 100gm dark chocolate
- 300ml cream
- 3 eggs
- 1 shot of black coffee
- 1Tbs whiskey
Melt the chocolate and let cool a little.
Separate the eggs.
Whip the cream until it forms stiff peaks.
Whip the egg whites until they form stiff peaks.
Add the coffee and the whiskey to the chocolate and mix.
Then add the egg yolks and whisk together.
Add half the cream and gently whisk into the chocolate mix.
Add the remaining cream, mix.
Add half the egg whites and gently fold them in.
Add the remaining egg whites and gently fold in.
Chill for 2hrs or overnight.
